You are most likely to have to choose a caterer if you have an event which, be it a private family party or a business function, is in a venue other than a restaurant, hotel or banquet hall. This includes outdoor venues, offices your own home and often unique venues that are used for special one off events such as deserted power stations or subway stations. A good caterer though can make the serving of food and drink seamless though even in the most unlikely of places, you of course need to find a good caterer that will be suitable for you.

Of course you may choose your caterer and then choose the venue but it is usually the other way round: you may though avoid some places which insist on supplying catering: others have the option but allow you to bring caterers in if you want: these often have the advantage of proper kitchen facilities: other venues have limited kitchens or quite often none.

You may want to choose a caterer then based on what they can supply including cooking equipment. Cooking equipment they will usually setup in a marquee as a kitchen or they may have a kitchen inside a trailer or trailers. Of course sometimes you may choose something a little different like a Barbeque or Hog roast where the cooking equipment will differ accordingly.


If there is no kitchen at a venue there is often no bar: some caterers can supply one or at least serve drinks art tables: otherwise you may want a separate company to run a bar and serve drinks but this can complicate matters. Even more complicated is if you have separate waiting staff from another company or an agency; where caterers can organize waiting staff themselves they should be able to work with them more harmoniously so the waiters and kitchen staff each know what they are doing in relation to the other.

It may be that you want a caterer with another specialization of course and that these other options will be secondary. It is common to want a particular style of food: this could be for a themed event such as many business events or charity balls, it could also though be based on who the event is for. If you are holding a family events such as a wedding or birthday and the family are for example Cantonese you may want a Cantonese caterer who can provide genuine Cantonese food and drinks. It could equally be of course that you have visitors from a certain country and want to honor them with a meal of food from their country: it will be important to get it just right though.


There are many types of specialist caterer especially in large cities though many specialists will travel further. Other specialism though might be for buffets, Hors d’ Oeuvres or food for people with dietary requirements such as Vegetarians or people wanting Kosher food or Halal meat. You may think though that a general caterer is better if you have to provide for a wide range of requirements and tastes of where the scale of the caterer is most important. Often the biggest caterers who are capable of dealing with events for hundreds or even over a thousand people will be quite general but may have access to specialist chefs or have regional menus.
